Start with your last few projects. If you don’t have history yet, choose a conservative buffer, then refine as you track real usage.

Should kerf be included as “waste”?

Kerf is guaranteed loss, so yes. If your calculator already asks for kerf, don’t double-count. If it doesn’t, bake kerf into your waste % for cut-heavy jobs.
