Which saw dimensions should I measure?

Measure the unplugged saw through every intended slide, miter and bevel position. Include the motor, handle, hose and cables, not just the mounting footprint.

How are the wings kept level with the saw?

The center platform height is the desired working height minus the actual saw-bed height. Level the completed station and check both wings against the saw bed with a straightedge.
